  • 3 Tbsp. Dark soy
  • 1 Tbsp. Sesame oil
  • 4 x Scallions, minced
  • 1 Tbsp. Sugar
  • 1 1/2 tsp Salt
  • 5 x Garlic cloves, diced
  • 1 slc Ginger, diced
  • 2 med Aubergine, approx 1/2 lb each peeled, cut in 1" cubes Chilli paste, 1-2 tb
  • 4 x Scallions, minced
  • 2/3 c. Water
  • 5 Tbsp. Oil, for stir frying

  2. Preparation: - Heat Wok - Add in oil and let heatAdd garlic & ginger; stir fry [30] Sec.
  3. Add in chilli paste; stir fry [30] Sec.
  4. Add in "pork mix"; stir fry [2] Minutes.; break up clumps of meatInsure all meat is exposed to oilAdd aubergine; stir fry [4] Minutes.; gently scoop pcs of aubergineoff sides of Wok and into middleSprinkle salt & sugar over ingredients; stir fry
  5. [2] Minutes.
  6. Pour in water and add in scallionsWhen water boils; Cover and cook over High flame
  7. [10] Minutes. untilaubergine has become soft and absorbed meat flavor - Serve!
