8 ounces asparagus, trimmed 1 ounce grated cheese 2 Tablespoons Rice Krispies cereal, crushed 1 teaspoon garlic powder 1 teaspoon lemon peel ½ Tablespoon butter, melted
Bring 1 cup of water to a boil in a large saucepan. Trim the woody ends from the asparagus stalks. Add the asparagus to the boiling water and cook until tender but still crisp, about 6 minutes. Drain well. Meanwhile, in a small bowl, toss the cheese, crushed rice cereal, garlic powder and lemon peel until blended. Preheat the broiler. Arrange the asparagus stalks in a single layer in an flameproof baking dish. Drizzle the asparagus with melted butter and sprinkle an even layer of the breadcrumb mixture over the asparagus. Broil about 4 inches from the heat until the bread crumb mixture is golden brown, about 3 minutes. Serve hot. 3.2.2646
I realized something recently.
First, I can’t believe how diverse my recipes have become. I remember when I first started blogging. I was writing about how chicken doesn’t have to be boring. I shared chicken recipes from around the world.
Second, I discovered that I just don’t make enough side dishes to share with all of you.
So I decided to try making a veggie dish that is Au’ gratin. It’s French and it means a dish that is topped with a browned crust, often using breadcrumbs, grated cheese, egg and/or butter.
But, just between you and me, I need to get healthier and make healthier choices. So, folks, instead of bread crumbs I used Rice Krispies. I really was looking for the brown rice cereal, but my market didn’t have it. I settled for the regular.
Which brings me to a healthier version of an au’ gratin side dish that you will fall in love with.
