Рецепт Asparagus and Cherry Tomato Quiche
Usually when I make quiche it’s as a main course, filled with both meat and vegetables.
For a change, I decided to have it as a side dish – well, a combination side dish, working as both the rice and the vegetable.
Also, for a change, I kept it simple, just using spring vegetables.
Asparagus and Cherry Tomato Quiche
Total time: 65 minutes
Ingredients:
The Crust:
- 1/2 cup Basmati rice
- 1 cup chicken stock
- 1/4 cup shredded cheese
- 1 egg
- The Filling:
- 18 – 20 asparagus spears, cut to fit a bit less than half the diameter of the quiche plate
- 9 – 10 cherry tomatoes, cut in half
- 4 green garlic, thinly sliced,m including green tops
- 2 tsp olive oil
- 3 eggs
- 1/2 cup (4oz, 120ml) milk
- 1/2 cup (4oz, 120gr) Greek yogurt
- 1/2 cup shredded cheese
Instructions:
The crust:
Cook rice in stock according to package directions. Can be done ahead or the day before.
If rice is just cooked, spread it on a plate to cool for 5 minutes before adding to egg.
Oil a 9″ (22 cm) pie or quiche plate.
Lightly whisk 1 egg.
Add 1/4 cup of the cheese and the cooked rice. Mix well.
Pat into the quiche plate, working it up the sides as best you can.
Bake in 400F (200C) oven for 10 minutes.
Remove and set aside.
The filling:
Heat water in a saucepan over high heat.
When boiling, add asparagus and blanch for 3 minutes.
Drain and refresh under cold water.
Dry on paper towels.
Saute green garlic in oil until tender.
In medium bowl whisk 3 eggs well.
Add milk, yogurt and whisk to combine.
To assemble:
Spread green garlic on rice crust
Arrange the asparagus spears like the spokes on a wheel, radiating out from the center
Put a tomato half, cut side down, between each asparagus spear.
Pour the egg mixture over all, sprinkle with cheese and bake for 30 minutes.
Let stand 5 minutes before serving.
Note: I put the quiche/pie plate on a pizza pan before pouring the egg/milk over. Makes it easier to get into the oven and catches any drips and spills – saving oven clean-up.
Why is it, whenever I try to do things the easy way, it ends up being twice as difficult and takes three times longer than it would have had I done it the hard way?
That doesn’t make sense, does it?
Let me explain.
We had friends here last week. They were renting a car for a little driving adventure.
I offered mon mari’s mobile phone for them to take with them… just in case.
He has an old, pay-as-you go phone.
When they got back, my friend couldn’t find the phone.
As it was old and only had a week or so of time left on it I wasn’t upset.
Actually, it was just the kick I needed to upgrade my mobile.
Anyway… Why not?
I discovered I could give mon mari my old phone (much newer than his old phone), get him a proper contract, get a new phone for me and save money over all.
That was when my friend found the phone….
Now I really didn’t care.
I placed my orders.
I had a choice of having my phone delivered to my house or the local Tabac (tobacco shop. Tobacco shops sell all sorts of things – books, magazines, fishing and hunting gear and licences, candy and, apparently, act as drop boxes)
I elected to have it delivered to the house.
It was delivered to the Tabac.
Still, all pretty easy so far.
Today I got the SIM card for mon mari.
I have to do all this, even though I have a contract with them for our internet, internet phone and my mobile.
I managed all this because it was easier to do it over the internet than to go into the Orange store and do it in person.
Tomorrow I go into the Orange store, with all my papers, and finish it in person.
