A very interesting twist on "typical" quesadillas. I had some leftovers, so next meal added sauteed onion and garlic to veggies and chicken, and served over brown rice. Awesome!Этот рецепт был приготовлен/опробован мной!
%20with%20leprechauns%20on%20the%20brain.%20In%20my%20last%20post,%20I%20mentioned%20that%20while%20my%20husband%20and%20I%20were%20busy%20snacking%20on%20these%20Asian%20quesadillas%20with%20hoisin%20sauce,%20chicken%20and%20zucchini,%20T%20was%20busy%20fashioning%20a%20leprechaun%20trap%20out%20of%20a%20cardboard%20box,%20complete%20with%20a%20door%20propped%20open%20with%20a%20toothpick.%3C/p%3E%3Cp%3EAccording%20to%20T,%20leprechauns%20are%20not%20very%20good%20rule-followers.%20In%20fact,%20they%20go%20out%20of%20their%20way%20to%20break%20the%20rules%20(as%20evidenced%20by%20our%20leprechaun%20visitor%E2%80%A6more%20on%20that%20later).%20So,%20T%20used%20a%20little%20reverse%20psychology%20to%20fool%20any%20Irish%20green-clad%20little%20men%20that%20might%20happen%20upon%20his%20trap.%20Things%20such%20as%20%E2%80%9CDo%20not%20enter%E2%80%9D%20and%20%E2%80%9CNo%20gold%20here%E2%80%9D%20were%20etched%20with%20Crayola%20marker%20around%20the%20perimeter%20of%20the%20box.%3C/p%3E%3Cp%3EOf%20course,%20if%20you%20really%20want%20to%20attract%20a%20creature%20who%20is%20obsessed%20with%20rainbows%20and%20pots%20of%20gold,%20cold%20hard%20cash%20should%20be%20involved.%20T%20carefully%20laid%20a%20trail%20of%20pennies,%20starting%20from%20the%20top%20of%20the%20stairs,%20across%20the%20landing%20and%20into%20his%20room,%20right%20up%20to%20the%20door%20of%20the%20trap.%20Each%20day%20when%20he%20came%20home%20from%20school,%20T%20checked%20his%20trap,%20clearly%20disappointed%20when%20everything%20remained%20intact.%20As%20a%20show%20of%20brotherly%20support,%20my%20older%20son%20(M)%20made%20his%20own%20version%20of%20a%20leprechaun%20trap%20and%20tucked%20it%20away%20in%20the%20family%20room.%3C/p%3E%3Cp%3EBy%20Saturday%20evening,%20things%20reached%20a%20fever%20pitch%20of%20anxiety.%20St.%20Patrick%E2%80%99s%20Day%20was%20almost%20over%20and,%20still,%20no%20sign%20of%20Irishmen%20of%20any%20kind.%20T%20went%20upstairs%20to%20take%20a%20bath%20while%20M%20and%20my%20husband%20took%20our%20dog%20for%20a%20walk.%20I%20went%20upstairs%20to%20keep%20T%20company%20and%20I%20swear%20on%20the%20Blarney%20Stone%20(okay,%20I%20don%E2%80%99t%20have%20even%20a%20pinch%20of%20Irish%20in%20me)%20that%20I%20stayed%20up%20upstairs%20the%20entire%20time.%3C/p%3E%3Cp%3EWhen%20T%20and%20I%20trundled%20downstairs%20after%20his%20bath,%20we%20were%20met%20with%20a%20shocking%20sight!%20Chairs%20tipped%20over,%20shoes%20scattered%20all%20over%20the%20living%20room,%20T%E2%80%99s%20stuffed%20tiger%20hanging%20upside-down%20from%20the%20bannister%20and%20both%20traps%20knocked%20over.%20Obviously%20the%20work%20of%20a%20cheeky%20leprechaun%20bent%20on%20wreaking%20havoc!%20Apparently%20we%20scared%20it%20off%20when%20we%20came%20downstairs%20because%20the%20boys%E2%80%99%20piles%20of%20pennies%20were%20scattered%20but%20not%20stolen%20and%20the%20bottles%20of%20Guinness%20were%20still%20in%20the%20fridge.%20Next%20year%20we%E2%80%99ll%20set%20more%20traps%20and,%20with%20a%20little%20luck,%20we%E2%80%99ll%20catch%20one%20of%20those%20little%20buggers.%3C/p%3E%3Cp%3ELet%E2%80%99s%20move%20on%20to%20the%20recipe.%20All%20I%20will%20tell%20you%20is%20this:%20make%20it.%20Now,%20this%20week,%20next%20week%E2%80%A6just%20soon.%20It%20must%20not%20be%20missed.%3C/p%3E%3Cp%3EThe%20recipe:%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20toss%20chicken%20strips%20with%205-spice%20powder,%20salt%20and%20pepper.%20Heat%20a%20large%20nonstick%20skillet%20over%20medium-high%20heat.%20Coat%20with%20cooking%20spray.%3C/p%3E%3Cp%3EAdd%20the%20chicken%20and%20cook,%20stirring%20occasionally,%20until%20the%20chicken%20is%20cooked%20through.%20Remove%20the%20chicken%20from%20the%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EWipe%20the%20pan%20clean,%20coat%20with%20cooking%20spray%20and%20place%20over%20medium%20heat.%20Add%20the%20zucchini%20and%20red%20bell%20pepper,%20and%20cook%20until%20just%20tender.%3C/p%3E%3Cp%3ESpread%202%20teaspoons%20of%20hoisin%20sauce%20on%20each%20tortilla.%20Heat%20a%20medium-sized%20skillet%20over%20medium%20heat.%20Lay%20one%20tortilla%20(with%20hoisin%20sauce)%20in%20the%20skillet,%20and%20cover%20half%20of%20the%20tortilla%20with%20a%20quarter%20of%20the%20chicken,%20zucchini,%20bell%20peppers%20and%201%20tablespoon%20of%20mozzarella.%3C/p%3E%3Cp%3EFold%20the%20tortilla%20over%20the%20filling%20and%20cook%20until%20golden%20brown,%203%20to%204%20minutes%20per%20side.%3C/p%3E%3Cp%3ERemove%20from%20pan%20and%20cut%20into%203%20pieces.%20Repeat%20with%20remaining%20tortillas%20and%20fillings.%20Serve.%3C/p%3E%3Cp%3EOther%20quesadilla%20recipes:%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20toss%20chicken%20strips%20with%205-spice%20powder,%20salt%20and%20pepper.%3C/p%3E%3Cp%3EHeat%20a%20large%20nonstick%20skillet%20over%20medium-high%20heat.%20Coat%20with%20cooking%20spray.%3C/p%3E%3Cp%3EAdd%20chicken%20and%20cook,%20stirring%20occasionally,%20until%20chicken%20is%20cooked%20through.%20Remove%20chicken%20
