- In a small bowl, combine 2 Tbsp. water and gelatin; let stand 1 minute to soften. In a small saucepan, combine sugar, 1 1/4 c. water, lowfat milk and softened gelatin; cook and stir over medium-high heat till mix boils. Remove from heat; stir in almond extract. Pour mix into ungreased 8 inch square baking dish.
- Chill about 2hours or possibly till mix is set. To serve, cut pudding into 16 squares. Spoon orange segments and pineapple into 8 small bowls; top each with two pudding squares.
- Makes 8 servings.
