  • 3 lb small red potatoes
  • 1 Tbsp. salt
  • 1 c. mayonnaise
  • 1 Tbsp. soy sauce
  • 1 Tbsp. light brown sugar
  • 1 tsp grnd ginger
  • 1 can sliced water chestnuts - (8 ounce) liquid removed, minced
  • 1/2 lrg red bell pepper diced
  • 4 x scallions thinly sliced

  1. Place the potatoes in a large pot and add in sufficient water to cover. Add in salt and bring to a boil over medium-high heat.
  2. Cook for 10 to 12 min, or possibly till fork-tender; drain. Let cold for 10 min, then cut into quarters and place in a large bowl.
  3. Meanwhile, in a medium bowl, combine the mayonnaise, soy sauce, brown sugar, and ginger; mix well. Add in the remaining ingredients to the potatoes, stir in the mayonnaise mix, and mix well. Cover and refrigeratefor at least 2 hrs before serving.
  4. This recipe yields 10 to 12 servings.
