- Place the potatoes in a large pot and add in sufficient water to cover. Add in salt and bring to a boil over medium-high heat.
- Cook for 10 to 12 min, or possibly till fork-tender; drain. Let cold for 10 min, then cut into quarters and place in a large bowl.
- Meanwhile, in a medium bowl, combine the mayonnaise, soy sauce, brown sugar, and ginger; mix well. Add in the remaining ingredients to the potatoes, stir in the mayonnaise mix, and mix well. Cover and refrigeratefor at least 2 hrs before serving.
- This recipe yields 10 to 12 servings.
