%20with%20toasted%20mixed%20nuts,%20dried%20cranberries%20and%20figs,%20homemade%20croutons%20(prepped%20in%20advance)%20and%20some%20sort%20of%20fruit%20(apples,%20mandarin%20oranges,%20and%20berries%20are%20all%20great%20options!).%3C/p%3E%3Cp%3EThis%20weekend%20when%20a%20late%20afternoon%20hunger%20storm%20hit%20my%20belly,%20I%20was%20tempted%20to%20rush%20out%20and%20grab%20my%20favourite%20$2.99%20bacon%20and%20cheddar%20perogies%20with%20sour%20cream%20at%20the%20local%20Hungarian%20takeout%20joint.%20Just%20as%20I%20was%20about%20to%20reach%20for%20my%20coat%20to%20give%20in%20to%20the%20temptation%20of%20saut%C3%A9ed%20bacon,%20potatoes,%20and%20onions,%20I%20remembered%20all%20that%20prep%20I%20had%20previously%20done%20in%20the%20week%20and%20realized%20that%20I%20already%20had%20a%20fantastic%20lunch%20in%20the%20works!%20With%20pre-boiled%20eggs%20in%20the%20fridge,%20as%20well%20as%20some%20arugula,%20and%20green%20onions,%20I%20could%20see%20how%20easily%20I%20could%20have%20a%20delicious%20lunch%20ready%20in%20less%20time%20than%20it%20would%20take%20me%20to%20go%20out%20and%20purchase%20pre-made%20perogies.%20No,%20an%20egg%20salad%20sandwich%20doesn't%20sound%20as%20appetizing%20as%20bacon%20and%20cheddar%20perogies%20slathered%20with%20sour%20cream,%20but%20an%20an%20egg%20salad%20crostini%20with%20Koslik's%20Triple%20Crunch%20Mustard,%20and%20green%20onions,%20topped%20lightly%20dressed%20arugula,%20extra%20virgin%20olive%20oil,%20fresh-cracked%20pepper,%20and%20Maldon%20salt%20sounds%20pretty%20freaking%20wonderful%20if%20you%20ask%20me!%20Again,%20it's%20all%20about%20building%20the%20flavour!%3C/p%3E%3Cp%3EI%20began%20with%20delicious%20Prince%20Edward%20County%20Rye%20bread%20and%20spread%20some%20rich%20grass-fed%20butter%20on%20top%20to%20prevent%20any%20sogginess%20from%20the%20egg%20salad.%20The%20egg%20salad%20was%20seasoned%20to%20perfection%20with%20more%20than%20just%20salt%20and%20pepper,%20but%20with%20Koslik's%20Triple%20Crunch%20Mustard,%20mayonnaise,%20and%20green%20onions.%20The%20arugula%20garnish%20was%20given%20the%20same%20amount%20of%20care%20as%20the%20rest%20of%20the%20dish,%20by%20being%20tossed%20in%20a%20light%20lemon%20vinaigrette%20(literally%20just%20lemon%20and%20olive%20oil%20with%20salt%20and%20pepper).%20The%20whole%20dish%20was%20finished%20off%20with%20a%20little%20bit%20more%20fresh%20cracked%20pepper,%20Maldon%20Salt%20(a%20crystallized%20finishing%20salt%20that%20provides%20both%20texture%20and%20a%20%22clean%22%20salt%20flavour),%20and%20a%20light%20drizzle%20of%20extra%20virgin%20olive%20oil.%20As%20you%20can%20see,%20this%20dish%20is%20all%20about%20building%20flavour%20on%20flavour,%20and%20texture%20on%20texture,%20which%20makes%20the%20final%20result%20irresistible,%20satisfying,%20and%20positively%20delicious!%20Perogies%20who?%20Sorry,%20forgot%20all%20about%20those%20potatoes%20and%20bacon,%20this%20crostini%20is%20just%20too%20good!%3C/p%3E%3Cp%3EListening%20To:%3C/p%3E){kind=link}
