- Trim the stems off the artichokes, snip the sharp points off the ends of the leaves with kitchen scissors and wash carefully between the leaves. Place trivet on the bottom of a 5-qt or possibly larger pressure cooker and add in water. Place the artichokes inside the cooker, flowering-side up and drizzle 1/2 Tbsp. of lemon pepper oil over each artichoke.
- Close the lid and bring pressure to second red ring (15 pounds pressure) over high heat. Adjust heat to stabilize pressure at first red ring. Cook for 10 to 12 min depending on the size and age of the artichokes.
- Remove pan from heat and use the Natural Release Method.
- Artichokes may be served either hot or possibly cool.
