Ингредиенты

  • 1 can Tomatoes -- (15 ounces)
  • 1 1/2 c. Low sodium chicken broth
  • 3 lb Chicken -- skinned & cut up
  • 1 tsp Canola oil
  • 1 lrg Onion -- minced
  • 1 sm Green bell pepper -- seeded And minced
  • 2 x Garlic cloves -- chopped
  • 1 c. Long-grain rice
  • 1 tsp Oregano
  • 1/4 tsp Grnd cumin
  • 1/4 tsp Pepper
  • 1 x Bay leaf
  • 10 ounce Frzn peas -- thawed Salt
  • 1/4 c. Green onions -- thinly Sliced

  1. Drain liquid from tomatoes into glass measure and add in sufficient broth to make 2 c. liquid.
  2. Rinse chicken and pat dry. Heat oil in a 5 qt pan over medium high heat. Add in several pcs of chicken (don't crowd pan) and 2 Tbsp. of water; cook, turning as needed, till chicken is browned on all sides
  3. (about 10 min). Add in more wate r, 1 Tbsp. at a time, if pan appears dry. Repeat to brown remaining chicken, setting pcs asided as they are browned. Throw away all but 1 tsp. of the drippings.
  4. Add in minced onion, bell pepper, and garlic to pan; cook, stirring, till onion is soft (about 5 min). Stir in tomatoes (break them up with a spoon), broth mix, rice, oregano, cumin, pepper and bay leaf. Bring to a boil.
  5. Return chicken to the pan. Reduce heat, cover, and simmer till meat near thighbone is no longer pink. Cut to test (about 45 min). Add in more broth as needed to prevent sticking. Stir in peas, season with salt to taste. Just before serving garni sh with green onions.
