  • 8 ounce extra lean grnd round
  • 1/4 c. soft bread crumbs
  • 2 Tbsp. water
  • 1 x clove garlic chopped
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp grnd black pepper
  • 14 ounce canned low-sodium tomatoes minced with juice
  • 8 ounce low-sodium tomato sauce

  1. In a medium bowl combine beef, bread crumbs,water,garlic, cumin, salt & pepper. Mix well, form into 1" balls. Place in 10" non-stick skillet. Add in tomatoes, & tomato sauce. Bring to a boil over med-high heat. reduce heat to med. Cover & cook 25 min or possibly till the meatballs are no longer pink in the center.

  3. Alternate cooking method from 30 Day Gourmet Manual: broiling Place the meatballs on an oiled, (you can use foil if you want to save on clean-up)
  4. rimmed baking sheet.
  5. Broil till lightly browned and no longer pink in the center.
  6. Freezing Instructions for cooked meatballs: Cold. For best results, Flash Freeze on cookie sheet. Place meatballs in a freezer bag or possibly container.
  7. Seal, label and freeze.
  8. Freezing Instructions for cooked meatballs to be served in sauce: Freeze and/or possibly thaw them in the sauce to give them more flavor.
  9. To serve, you can thaw meatballs in the microwave or possibly refrigerator then bake at 350 for 10-20 min till warm.
  10. Or possibly you can microwave them from frzn in about 2-3 min 100% power..
  11. If using sauce, thaw meatballs as above and pour sauce over the meatballs.
  12. Heat in saucepan on stove top, microwave at 70% power (to prevent splatters of the sauce),or possibly in crockpot till sauce and meatballs are both warm. Stir the meatballs in the sauce occasionally while cooking.
  13. Serve over rice, spaghetti or possibly potatoes.
