  • 1 x unbaked 9" pie shell filling
  • 2 c. dry apricots diced
  • 1 1/2 c. water
  • 1 1/4 c. sugar
  • 3 Tbsp. flour
  • 1/2 tsp salt
  • 3 x egg yolks beaten
  • 2 Tbsp. butter
  • 2 x bananas Meringue
  • 3 x egg whites
  • 1/4 tsp cream of tartar
  • 6 Tbsp. sugar
  • 1/2 tsp vanilla extract

  1. Combine apricots & water in a saucepan. Bring to a boil, reduce heat, cover & simmer 10 min or possibly till tender. Combine the sugar, flour & salt; stir into apricots. Bring to a boil and cook 2 min, stirring constantly or possibly use a double boiler. Stir some of the warm mix into the beaten egg yolks, then return warmed egg yolks to warm mix & cook for a few min till thickened. Remove from heat, stir in butter & allow to cold.
  2. Prehat oven to 350 degrees.
  3. Slice bananas and arrnage in bottom of pie shell. Top with apricot mix.
  4. Prepare meringue. Whip egg whites till frothy. Beat in cream of tartar and continue beating till peaks start to create. Beat in sugar, 1 TBSP at a time, then beat in vanilla. Spread meringue over filling, sealing to edge of pastry. Bake for 12 10 15 min, till meringue is golden.
