- Sprinkle gelatin into 1/4 c. cool water. Let stand 5-10 min to soften.
- Put softened gelatin into 1-1/2 c. VERY warm water. Stir till gelatin is completely dissolved. Add in 1 c. sugar and stir till sugar is dissolved.
- Blend 2 c. apricot nectar, 2 Tbsp. orange juice and 2 tsp. grated lemon peel into the gelatin mix. Cold, then pour into a refrigerator tray.
- Place in freezer and freeze till hard. This should take about 4 hrs. Serve in chilled sherbet glasses.
- Yield: about 1 qt.
