- In a large bowl, combine the flour and 1/2 cup sugar
- Cut in the butter until crumbly
- Add the egg yolks and vanilla
- Mix well
- Press into a greased 15 x 10 inch baking pan
- Bake at 350 F for 12-15 minutes or until lightly browned
- Spread the apricot filling over the crust
- In a large bowl, beat the egg whites until soft peaks form
- Gradually add the remaining sugar, 1 tablespoon at a time
- Beat until stiff peaks form
- Spread over the apricot layer
- Sprinkle with the pecans
- Bake for 25-30 minutes or until lightly browned
- Cool in the pan on a wire rack
- Cut into the bars
