- In medium bowl, cut butter into flour with a pastry blender till crumbly. Put together lowfat sour cream and egg yolk, blend into flour to make a soft dough. Divide dough into 4 equal parts, wrap separately with Saran Wrap and chill overnight. Set aside.48 pecan halves. Chop remaining pecans and put together with vanilla wafer crumbs and coconut, set aside.
- On a well-floured pastry, roll 1 portion of dough into a 12-inch square. Spread 1/3 cup of preserves over a square. Sprinkle with 1/4 of crumb mix. Roll up like a jelly roll. Close each end by pinching together. Dampen the long edge with water to seal. Place on an ungreased baking sheet.
- Cut slits at 1 inch interval, making 12 sections. Slightly beat egg whites with 1 tbsp water. Brush top of roll with egg white. Put a pecan half on top of each 1 inch section. Repeat with other pcs of dough. Bake at 350 degrees for 30-35 min. Drizzle with confectioners' sugar glaze.
- Cool and slice at each slit.
