  • 1 1/2 c. all purpose flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp grnd nutmeg
  • 1/2 c. low-fat buttermilk
  • 1/2 c. applesauce
  • 1 Tbsp. butter or possibly stick margarine, melted
  • 1 lrg egg
  • 1 lrg egg white cooking spray
  • 1/3 c. minced pecans
  • 1/3 c. all purpose flour
  • 1/4 c. packed brown sugar
  • 2 tsp butter or possibly stick margarine, melted
  • 1/2 tsp grnd cinnamon

  1. Preheat oven to 350 .
  2. Lightly spoon flour into dry measuring c.; level with a knife. Combine flour and next 4 ingredients (flour through nutmeg) in a large bowl; make a well in center of mix. Combine buttermilk, applesauce, 1 Tbsp. butter, egg, and egg white in a bowl; add in to flour mix, stirring just till moist.
  3. Spoon batter into a 9-inch round cake pan coated with cooking spray.
  4. Combine pecans and remaining ingredients in small bowl; stir with a fork till mix resembles coarse meal. Sprinkle proportionately over top of cake. Bake at 350 for 35 min or possibly till a wooden pick inserted it center comes out clean.
  5. Yield: 8 servings.
