Applesauce Pancakes for Valentine’s Day

A busy, busy, busy week has passed. We finished the week with a home ballgame last night (one of three last week), so I was worn out and tired and slept until 9:30 a.m. this morning.
Don’t judge. I needed that. (I also think I caught The Hubs’ cold.)
This post really isn’t starting out as a traditional Valentine’s Day post, I know, but let me tell you what I whipped up for breakfast when I finally did roll out—Applesauce Pancakes.
- Applesauce Pancakes
- 1 egg
- 3/4 c. milk
- 1 T. sugar
- 2 T. applesauce
- 3 t. baking soda
- 1 c. flour
- 1/2 t. cinnamon
- 1/2 t. salt
- 1-2 T. butter (for griddle)
Beat egg vigorously with a whisk until fluffy. Add milk, sugar and apple sauce and whisk some more. Add dry ingredients and stir until just smooth.
Heat griddle and melt a bit of butter on it. For each pancake, pour a scant 1/4 c. of batter onto the griddle. Cook until puffed and dry around the edges. (This is a thick batter.) Turn and cook other side until golden brown.
This makes about 6 pancakes. (Recipe is easily doubled.)
As I said, I was feeling a little run down this morning and after I had the pancake batter whipped up, I realized I probably didn’t have enough syrup and I was NOT running to the store this morning. What follows was going to be a recipe, but is obviously still in development. I didn’t really measure anything and then (of course) my syrup pitcher full of ingredients decided to boil over in the microwave. Nice. What was left in the pitcher was delicious so I will try to perfect the recipe again.
If you would like to replicate the syrup (sans the microwave mess), here are some rough directions.
Honey-Applesauce Syrup
1/4 c. pure maple syrup
1/4 c. honey
3 T. apple sauce
1/2 t. cinnamon
Carefully heat all ingredients while whisking to incorporate. Serve warm over heart shaped pancakes for Valentine’s Day.
Obviously, feel free to tweak the above recipe! I really don’t know how much of each ingredient was still left in the pitcher and how much was left in the bottom of the microwave.
On a better note, I am swigging down some honey and lemon hot water and going to take it easy the rest of the day. The Hubs’ has a secret surprise for me tonight. I keep asking for hints. I think we’re going to our favorite “only for special occasions” restaurant.
