- Sweet short pastry:Mix the flour and salt in a bowl. Rub in the butter with your fingers or possibly a pastry blender till the mix resembles coarse meal.
- Whisk the egg yolk, sugar and 2 Tbsp. water together in another bowl add in to the flour mix, and blend till the pastry is smooth and hold together in a ball. Wrap in plastic and chill it for at least 20 min.
- Divide into 4 and roll each portion out to a circle 12 cm diameter (big sufficient to enclose an apple).
- To finish:Mix together sugar, cinnamon and butter. Place a whole apple in the centre of each pastry round, fill center with butter mix. Lift edges of pastry up over apple and join at the top with a little beaten egg.
- Place on a greased oven tray with the join down, decorate with pastry leaves if you like, brush with beaten egg.
- Make a small hole in the top to allow steam to escape.
- Bake at 190C/380F for 25-30 min till pastry is golden and apple is tender. Brush with melted butter and serve.
- You can substitute puff pastry for short pastry in this recipe.
