When your given a choice, do you have a hard time making a decision? I do, when the items I have to choose between are both equally delicious!

This month a select few of the Allrecipes.com Allstars were sent a goodie box from Splenda. I was pretty happy to be in this group as I have cooked and baked with Splenda several times in the past. I remember in particular a pecan pie I made one Thanksgiving. It was when they had just come out with the Splenda Brown Sugar Blend. De-lish-ious! :) Nobody even knew it was made with Splenda!

I like to try recipes with Splenda for several reasons. One, it cuts the carbs and two, it reduces the amount of calories in your recipes. With Grumpy being diabetic, I am ususally trying to find ways that will allow him to have his cookie and eat it too.

This Apple Hand Pie that I made was really very simple. I made a few changes, such as making my own pie crust with white whole wheat flour and adding a tablespoon of butter and teaspoon of vanilla to the apple mixture. I wanted the filling to taste a little richer and in my opinion, adding some real butter does just that!

Now these Harvest Pumpkin Cookies were very delicious. As a matter of fact, they were inhaled pretty darn quickly. Record disappearance in the Grumpy Household. Grumpy told me I needed to make them again. I told him only if he he doesn't eat them all up in a day.

Which was our favorite? Well, I really liked both recipes. BUT the recipe we would probably eat over more time (as long as I hide them from Grumpy) would be the cookies. They are soft and have that nice raisin chew along with pecan crunch inside. Not to mention I did do the points calculations for the cookies and it came out to only 2 points per cookie. Purdy darn good.

So what would you choose? apple or pumpkin?

Instructions

Using a pastry blender or a fork, blend the flour, salt, and shortening until mixture resembles small "pea" like crumbles.Using a fork, Stir in ice cold water, 1/2 tablespoon at a time, until mixture begins to form a ball. Remove from mixing bowl and shape dough into ball. Divide into four pieces to make hand pies. Dough is very fragile, please work carefully :)You can also use this dough to make a pre-baked pie crust for pudding pies, or in a savory tart, just add your filling to the unbaked crust and bake as recipe states.
