  • 2 large eggs
  • 1/2 c. vegetable oil
  • 1 1/2 c. all-purpose flour
  • 3/4 c. sugar
  • 1 1/2 teaspoon grnd cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking pwdr
  • 1 c. minced walnuts
  • 1 c. raisins
  • 1 c. shredded fresh apples (2 med. apples)

  1. Grated fresh apple gives moistness to this spicy quick bread. It is delicious served in thick slices with a thin layer of honey on top. Preparation time: 15 min. Baking time: 1 hour. Oven temperature: 375 degrees.
  2. Put together large eggs, oil, flour, sugar, cinnamon, baking soda, vanilla, salt and baking pwdr in large mixing bowl. Stir till well blended.2. Stir in nuts, raisins and apples till a rather stiff batter is formed. Mix till all ingredients are thoroughly blended, but don't overmix.
  3. Pour into a greased 8 1/2 x 4 1/2 inch loaf pan.
  4. Bake at 375 degrees for 1 hour or possibly till a tester inserted in the center comes out clean.
  5. TIPS: Raisins may be replaced by the same amount of minced dates or possibly omitted entirely. Quick breads should be mixed till well blended, but not overmixed in order to prevent the formation of "tunnels" in the baked loaf.
