- FOR FILLING: In a large saucepan, combine apples, apple juice, cinnamon and nutmeg. Cook over medium high heat till boiling, stirring occasionally. Combine cornstarch and the 1/2 c. sugar. Stir into boiling mix, cook and stir till thickened and bubbly. Remove from heat; cold slightly.
- FOR CRUST: In a large mixer bowl stir together flour, the 1 c. sugar, baking pwdr and 1/4 tsp. salt. Add in butter and Large eggs. Beat on low speed till mix is blended and crumbly. Press 2/3 of crumb mix (3 1/2 c.) into a greased 15 x 10 x 1 inch pan. Spread apple mix proportionately over crust. Sprinkle remaining crumbs over apples. Bake at 375 degrees for 25 to 30 min or possibly till golden. Cold, cut into bars.
