%3C/p%3E%3Cp%3EAnd%20the%20chef%20challenge%20continues.%3C/p%3E%3Cp%3EFirst%20was%20Tyler%20Florence's%20Chicken%20Francese%3C/p%3E%3Cp%3ESecond%20was%20Ann%20Burrell's%20Braised%20Chicken%20with%20Tomatillos%20and%20Jalapenos%3C/p%3E%3Cp%3EThis%20week...Ina%20Garten.%3C/p%3E%3Cp%3EI%20saw%20where%20someone%20had%20baked%20a%20pie%20in%20a%20cast%20iron%20skillet%20(thought%20that%20was%20totally%20cool!).%20Then%20I%20watched%20something%20about%20pie's%20on%20one%20of%20the%20cooking%20channels.%20By%20then%20pie%20was%20totally%20on%20the%20brain.%20Not%20only%20did%20I%20want%20to%20bake%20a%20pie...but%20I%20wanted%20to%20try%20my%20hand%20at%20making%20a%20lattice%20crust.%20A%20little%20research,%20a%20couple%20demos%20and%20I%20was%20ready%20to%20go.%3C/p%3E%3Cp%3ENot%20trusting%20my%20pie%20crust%20skills%20(especially%20with%20the%20lattice%20experimenting)...instead%20of%20making%20one%20pie,%20I%20decided%20to%20make%202%20small%20pies.%20One%20with%20a%20lattice%20top%20and%20the%20other%20just%20regular.%3C/p%3E%3Cp%3ESafety%20net%20thing..ya%20know?%20In%20case%20the%20lattice%20top%20was%20a%20total%20fail,%20I'd%20still%20have%20one%20that%20looked...edible.%3C/p%3E%3Cp%3EI%20have%20these%20two%20cute%20little%20cast%20iron%20skillets.%20They're%20about%205%22.%20Perfect%20for%20my%20two%20pies.%3C/p%3E%3Cp%3EWell,%20guess%20what?%20I%20had%20so%20much%20fun%20with%20the%20lattice%20top,%20I%20ended%20up%20making%20them%20both%20the%20same%3C/p%3E%3Cp%3EI%20went%20with%20the%20All%20American%20Apple%20Pie.%20Only...I%20didn't%20have%20enough%20apples.%20So%20I%20added%20pears.%20Plus,%20if%20I%20didn't%20use%20up%20my%20pears,%20they%20were%20going%20to%20go%20to%20waste.%20That%20was%20the%20only%20alteration%20I%20did%20to%20Ina's%20Deep%20Dish%20Apple%20Pie%20recipe.%3C/p%3E%3Cp%3EThe%20best%20thing%20about%20this%20recipe%20of%20hers%20is%20the%20crust!%20I%20absolutely%20loved,%20loved,%20LOVED%20the%20crust.%20(which%20is%20saying%20a%20hell%20of%20a%20lot%20cuz%20I'm%20not%20really%20into%20pie%20crust).%20Ina%20uses%20both%20butter%20and%20shortening.%20Plus%20she%20adds%20a%20bit%20of%20sugar.%20And....because%20of%20her....I%20now%20know%20how%20to%20make%20a%20crust,%20using%20my%20food%20processor.%20Homemade%20crust%20in%20a%20snap!%3C/p%3E%3Cp%3EThe%20pie%20itself%20is%20very%20good!%20However....I%20will%20make%20a%20few%20changes%20next%20time.%20Ina's%20a%20big%20fan%20of%20zest.%20I%20am%20too.%20It's%20just%20that....with%20the%20use%20of%20lemon%20and%20orange%20zest%20in%20the%20pie,%20it%20was%20a%20bit%20much.%20The%20apple%20and%20spice%20flavors%20were%20forced%20into%20the%20background.%20(pear%20isn't%20a%20strong%20flavor%20anyway....it%20was%20just%20a%20nice%20texture%20addition).%20I%20think%20a%20little%20less%20zest...or%20even%20none%20at%20all%20(but%20keep%20the%20orange%20juice)...would%20be%20a%20nice%20balance.%3C/p%3E%3Cp%3EOr%20maybe%20the%20apples%20I%20used%20just%20weren't%20tart%20enough%20to%20carry%20the%20citrus%20flavors?%3C/p%3E%3Cp%3EApple%20Pear%20Pie%20in%20a%20Cast%20Iron%20Skillet%3C/p%3E%3Cp%3EPerfect%20Pie%20Crust%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400'%20F%3C/p%3E%3Cp%3ENo%20prep-work%20needed%20for%20the%20cast%20iron%20skillets.%3C/p%3E%3Cp%3ENote:%20I%20put%20my%20food%20processor%20bowl%20and%20blade%20in%20the%20refrigerator%20and%20chilled%20before%20using.%20The%20less%20opportunity%20your%20butter%20and%20shortening%20have%20to%20warm%20up,%20the%20better%20the%20crust.%3C/p%3E%3Cp%3EPlace%20the%20flour,%20salt%20and%20sugar%20in%20the%20food%20processor.%20Pulse%20a%20few%20times%20to%20mix%20it%20all%20up.%20Add%20the%20butter%20and%20shortening%20and%20pulse%208%20-%2012%20times,%20until%20the%20butter%20is%20pea%20sized.%20While%20pulsing%20the%20machine,%20add%20in%20the%20ice%20water%20through%20the%20feed%20tube%20until%20the%20dough%20forms%20into%20a%20ball.%3C/p%3E%3Cp%3ETurn%20the%20dough%20ball%20out%20onto%20a%20lightly%20floured%20surface%20and%20roll%20into%20a%20ball.%20Divide%20the%20dough%20in%20half%20and%20wrap%20each%20half%20in%20plastic%20wrap.%20Refrigerate%20for%2030%20minutes.%3C/p%3E%3Cp%3EJust%20before%20the%20dough%20is%20done%20chilling,%20prepare%20your%20filling%20by%20combining%20the%20apples,%20pears,%20lemon%20and%20orange%20zest%20and%20juices,%201/2%20cup%20sugar,%20flour,%20salt,%20cinnamon,%20nutmeg%20and%20allspice.%3C/p%3E%3Cp%3ETake%20one%20half%20of%20the%20dough%20out%20(leaving%20the%20other%20in%20the%20fridge%20until%20you're%20ready%20to%20use).%20Because%20I%20used%202%20small%20skillets,%20half%20of%20this%20dough%20will%20be%20for%20one%20little%205%22%20pie,%20top%20and%20bottom%20crust.%20If%20I%20had%20used%20a%209%22%20or%2010%22%20skillet,%20it%20would've%20been%20just%20the%20bottom%20crust.%3C/p%3E%3Cp%3EDivide%20in%20half%20(set%20half%20aside%20for%20the%20top)%20and%20on%20a%20lightly%20floured%20surface,%20roll%20out%20the%20dough%20and%20drape%20it%20over%20the%20skillet.%20Gently%20fit%20the%20dough%20into%20bottom%20and%20sides%20of%20the%20pan%20and%20allow%20the%20dough%20to%20extend%201/2%22%20over%20the%20edge,%20trimming%20the%20dough%20away%20as%20needed.%3C/p%3E%3Cp%3EIf%20you%20notice%20that%20your%20filling%20is%20very%20wet%20and%20moist,%20don't%20be%20afraid%20to%20sprinkle%20some%20corn%20starch%20on%20the%20bottom%20crust%20before%20adding%20the%20filling%3C/p%3E%3Cp%3EFill%20the%20pie%20with%20half%20of%20your%20apple%20mixture.%20Brush%20the%20edges%20of%20the%20dough%20with%20an%20egg%20wash.%3C/p%3E%3Cp%3EWith%20the%20other%20half%20that%20you%20just%20set%20aside,%20roll%20and%20place%20on%20top%20of%20the%20pie,%20trimming%20the%20edges%20to%20about%201%22%20over%20the%20edge.%20Tuck%20and%20pinch%20and%20crimp%20the%20the%20two%20edges%20together.%20Make%20a%20couple%20of%20slits%20on%20top.%3C/p%3E%3Cp%3EOr....Cut%20into%201%22%20strips,%20laying%20them%20on%20top%20of%20the%20pie%20and%20weaving%20to%20make%20a%20lattice%20top.%20Here's%20a%20great%20demo%20on%20How%20to%20make%20a%20lattice%20pie%20crust%3C/p%3E%3Cp%3ERepeat%20with%20the%20remaining%20dough%20and%20filling.%3C/p%3E%3Cp%3EBrush%20the%20tops%20of%20your%20pies%20with%20the%20egg%20wash%20and%20sprinkle%20with%20sugar.%3C/p%3E%3Cp%3ETake%20strips%20of%20aluminum%20foil%20and%20cover%20the%20edges%20of%20your%20crust%20(so%20they%20don't%20brown%20and%20burn%20too%20quickly).%20Place%20the%20pie%20on%20a%20foil%20line%20baking%20sheet%20(this%20will%20catch%20the%20messy%20juices%20that%20will%20bubble%20over).%3C/p%3E%3Cp%3EBake%20for%20about%2045%20minutes%20(if%20you%20made%20one%20large%209%22%20or%2010%22%20pie,%20you%20will%20need%20to%20bake%20it%20for%201%20to%201%201/4%20hours),%20until%20the%20tops%20are%20brown%20and%20the%20juices%20in%20the%20pie%20begin%20to%20bubble%20out.%3C/p%3E%3Cp%3EServe%20warm,%20with%20a%20big%20scoop%20of%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3EWhat%20we%20have%20here%20is%20a%20nice%20flaky%20crust%20with%20a%20hint%20of%20sweet...firm%20yet%20tender%20apples,%20contrasting%20with%20the%20soft%20pears....and%20yes.%20I%20want%20to%20make%20these%20little%20pies%20again.%20And%20again.%3C/p%3E%3Cp%3EI%20may%20never%20bake%20another%20full%20sized%20pie.%20They%20are%20the%20perfect%20size%20for%20sharing...and%20keeping,%20without%20being%20too%20committed%20to%20one%20flavor.%3C/p%3E){kind=link}
