"It's, like... a home run pie!" Says Honey as he bites into one of these little palm sized lovelies. What the heck is a home run pie? I don't know but apparently it's some version of a hand pie.

Hand pies are something that my mom used to make for my brothers and me when we were little. They remind me of her hippie days when she made her own yogurt , bagels and ebelskievers with homemade jam. mmm.

Hand pies are also the perfect dessert for a picnic dinner; lucky for us we had one of those! Remember the ...in a box post? Yeah, this is the dessert :)

ok... they're kind of frightening looking... definitely 'home made'. I like it like that though :)

How to make a hand pie... I would have called my mom for her fantastical hippie day recipe but she was on her way home so I had to search my resources. Aka I googled it and came across a lovely blog called Tiny Morsels that I am currently thoroughly enjoying.

I did a little modification on the recipe to make it vegan but other than that, it's all her and thank you for some great inspiration!

Whisk together the flours, salt and sugar. Using a pastry cutter, cut in the 1/2 cup Earth Balance to create a crumbly texture. Add the tablespoons of ice water two at a time, mixing lightly in between.

As your dough forms, combine well and form into a ball. Wrap that ball in plastic wrap or put it in a sealed container and refrigerate for at least 1/2 hour, if not an hour.

The apples: slice into very thin strips, put them in a bowl and add the lemon juice, brown sugar, cinnamon and nutmeg. Mix well and set aside.

When your dough is done, preheat the oven to 375 and pull out your dough. Cut it in half, then fourths, then eights. One at a time, roll out the dough pieces into an oval-ish shape that is a little less than 1/4 inch thick.

On one half, layer about 5 or 6 apple slices so they're kind of stacked like stairs.

Cover them with the other half of the dough and crimp the edges.

Using a knife, create three or four vent holes in the tops of your pies.

Pop them in the oven for 20-25 minutes until they're toasty brown on top.

Serve:

Put them in a tupperware container for a picnic surprise or serve them right away. They would be great with some soy delicious vanilla ice cream or all by themselves, while you're standing over the sink, shoving it in your mouth because they're that good! :)
