- Heat the oil in the deep fryer to 360 degrees F (185 degrees C).
- In a bowl combine the 21/2 c. (625 mL) flour, cornmeal, brown sugar, baking pwdr and salt.
- Whisk together the buttermilk, water, Large eggs and vanilla.
- Add in the wet ingredients to the dry and mix to create a lumpy batter.
- Dredge the apple rings into the remaining flour, shaking off any excess.
- Dip the apples in batter and fry till golden brown, about 2 min per side.
- Remove from the oil and place on a paper towel to absorb the excess oil.
- Serve with Caramel Drizzle.
- Caramel Drizzle:In a pot combine the water and sugar.
- Over high heat bring to a boil and cook till the syrup becomes amber, about 7 min.
- Remove from the heat and whisk in the apple juice slowly, being careful of the steam released.
- Add in the cinnamon and star anise.
- Return to high heat and bring to a boil.
- Reduce to medium heat and simmer till reduced to 1 c. of liquid, about 20 min.
- Strain and cold. Throw away cinnamon stick and star anise.
- Store for up to 1 month in the refrigerator.
