Apple Cream Cheese Crostata
Yield: 4 servings
Cook Time: 25-30 minutes
Ingredients:
- For the apple filling:
- 4 apples-peeled, cored and sliced thin
- 2 tablespoons sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- For the crust:
- 1 cup flour-sifted
- pinch of salt
- 1 tablespoon sugar
- 1/2 teaspoon cinnamon
- 1/4 cup olive oil
- 1/4 cup skim milk + a little for brushing over the crust
- For the cream cheese layer:
- 4 ounces cream cheese at room temperature (the 1/3 fat variety works well)
- 2 tablespoons sugar
- 1 teaspoon vanilla
Directions:
In a medium bowl, sprinkle the sugar and spices over the apples. Toss to coat and then set it aside to allow the juices to come out.
Preheat oven to 400 degrees. In a medium bowl, mix the flour, salt, sugar and cinnamon. Add the olive oil and milk, stir until a soft dough forms. Turn the dough onto a floured surface and roll into a 12 inch circle. Transfer the dough to a cookie sheet with a Silpat liner on it.
Stir together the cream cheese, sugar and vanilla. Spread evenly on the dough, leaving about 1 inch from the edge uncovered. Pour the apples and their juices in the middle of the dough and spread out to cover the cream cheese.
Fold the exposed dough up and over the apples and brush the edge with milk and sprinkle with sugar.
Bake for 25-30 minutes, or until the dough is golden brown and the apples are tender.
* I also like to throw a little bit of homemade granola on top half way through baking and put a couple dots of butter over it so it gets a little crisp. And as you can see by the photo, somebody likes to add caramel sauce to the top (and a dollop of vanilla ice cream for good measure)
