I have a confession to make. It has to do with "stuffing". I'm specifically talking the kind of stuffing that we cram inside our Thanksgiving turkey. I've been told that I make delicious stuffing, but I wouldn't know. You see, I'm one of those Un-Americans who doesn't like stuffing.
There. I said it. I don't get what's so good about goopy, soggy bread, a bunch of onions and vegetables-- maybe oysters, or nuts... slathered with gravy. Every year, I take a bite and I'm still not impressed. But, I'm in the minority-- I know. My men devour stuffing with great relish. More for them!
Pass me the mashed potatoes and cranberry sauce, and I'm happy. I'm sorry. I just can't get excited about stuffing!

.%20%20The%20next%20thing%20I%20knew,%20I%20grabbed%20some%20shallots,%20for%20extra%20flavor%20and%20I%20preheated%20the%20oven%20to%20425F.%3C/p%3E%3Cp%3EI%20admit%20that%20any%20kind%20of%20measuring,%20flew%20out%20the%20window.%20%20I%20eyeballed%20about%201%20cup%20of%20grated%20Cheddar%20and%20Monterey%20Jack%20cheese.%3C/p%3E%3Cp%3EOne%20peeled%20and%20sliced%20apple%20went%20into%20the%20bowl,%20and%20about%20one%20cup%20of%20breadcrumbs,%20and%20a%20little%20garlic%20salt.%3C/p%3E%3Cp%3EAfter%20cutting%20a%20slit%20into%20the%20boneless%20chicken%20breast,%20I%20began%20to%20cram%20the%20stuffing%20in.%3C/p%3E%3Cp%3EThen%20I%20pondered,%20how%20to%20keep%20all%20this%20stuffing%20from%20falling%20out...%3C/p%3E%3Cp%3E..and%20I%20grabbed%20the%20kitchen%20twine%20and%20problem%20solved!%3C/p%3E%3Cp%3EI%20much%20prefer%20to%20sear%20and%20roast%20my%20meats,%20whenever%20possible.%20%20This%20method%20has%20proved%20succesful%20for%20me,%20in%20that%20my%20meats%20remain%20moist.%20After%20seasoning%20each%20breast%20with%20coarse%20salt%20&%20pepper,%20%20I%20seared%20each%20chicken%20breast%20in%20a%20bit%20of%20olive%20oil,%20in%20an%20oven-proof%20skillet.%3C/p%3E%3Cp%3EThen,%20I%20flipped%20them%20over%20and%20put%20them%20into%20a%20preheated%20425F%20oven,%20for%20about%2025%20minutes%20(or%20until%20the%20chicken%20is%20at%20160F).%3C/p%3E%3Cp%3EI%20removed%20the%20chicken%20breasts,%20set%20them%20on%20a%20plate%20and%20loosely%20covered%20them%20with%20foil.%3C/p%3E%3Cp%3EThe%20pan%20sauce%20I%20made,%20turned%20out%20to%20be%20one%20of%20my%20best%20ones%20yet!%20%20I%20started%20by%20deglazing%20the%20pan%20with%20some%20apple%20cider,%20then%20I%20added%20a%20splash%20of%20white%20wine.%20%20This%20is%20Boiled%20Cider,%20and%20I%20buy%20it%20from%20King%20Arthur%20Flour.%20%20The%20boiled%20cider%20really%20brings%20out%20the%20flavor%20in%20apple%20pie,%20and%20I'm%20finding%20it%20works%20great%20in%20so%20many%20recipes.%20I%20added%20a%20%22splash%22%20(about%202%20Tablespoons),%20and%20about%201%20cup%20of%20chicken%20stock.%20%20Then,%20I%20let%20it%20reduce%20to%20about%20half--%20about%207-8%20minutes,%20on%20medium-high%20heat.%3C/p%3E%3Cp%3EThe%20aroma%20of%20this%20dinner%20cooking%20brought%20my%20husband%20out%20of%20his%20office,%20and%20anxiously%20waiting%20for%20dinner.%3C/p%3E%3Cp%3EThe%20pan%20sauce%20was%20truly%20one%20of%20my%20best--%20the%20sweetness%20of%20the%20apple%20cider,%20and%20a%20splash%20of%20acidity%20from%20the%20white%20wine--%20perfection!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20This%20is%20a%20stuffing%20I%20learned%20to%20love,%20at%20first%20bite.%20%20Melted%20cheese%20and%20apples%20is%20a%20terrific%20combination.%20%20The%20shallots%20and%20the%20mild%20anise%20flavor,%20of%20the%20tarragon,%20added%20a%20lovely%20savory%20element%20to%20the%20sauce.%20%20My%20husband%20loved%20this%20dinner,%20and%20I%20have%20to%20say%20that%20I%20did,%20too.%20%20%20The%20next%20time%20I%20make%20this,%20I%20think%20I'll%20butterfly%20the%20chicken%20so%20I%20can%20add%20a%20lot%20more%20stuffing,%20then%20roll%20it,%20and%20tie%20it%20with%20kitchen%20twine.%20%20%20These%20could%20easily%20be%20prepared%20in%20advance,%20and%20then%20cooked%20when%20company%20arrives.%20%20%20%20This%20recipe%20is%20a%20keeper.%20I%20promise%20you.%3C/p%3E%3Cp%3EWho%20says%20that%20chicken%20gets%20boring?%20%20Not%20this%20way!%20%20I%20pretty%20much%20changed%20around%20the%20original%20recipe,%20but%20I%20still%20thank%20Mel's%20Kitchen%20for%20inspiring%20me%20to%20stuff%20chicken%20with%20apples%20and%20cheese--brilliant!%3C/p%3E){kind=link}
