Apple Cake-Thank you Roz
Since we are in full apple mode around here, when I saw this recipe over at La Bella Vita, I knew I had to give it a try and guess what–it is FANTASTIC!! Good thing we had company when I made this, or who knows how many pieces I would have eaten…Thanks Roz, for continually whetting my appetite with your extraordinary recipes and blog!!
Apple Cake
INGREDIENTS:
Cake:
- 3 cups flour
- 2 cups sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 jumbo eggs
- 1-1/2 cups canola oil
- 3 teaspoons vanilla
- 3 cups finely chopped apples
- Brown Sugar Glaze:
- 1 cup firmly packed brown sugar
- 1/4 cup sugar
- 1 stick butter
- 1 teaspoon vanilla extract
- 4 tablespoons heavy cream
DIRECTIONS:
Preheat oven to 350 degrees. Grease a 9 x 13 inch pan. In a medium bowl, combine flour, sugar, cinnamon, baking soda and salt. Stir with a fork to mix everything together. In a large bowl, beat the eggs with a mixer at low speed until pale yellow and frothy/foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a wooden spoon and contine stirring the batter until the flour is completely absorbed and blended in (add about 1 cup at a time, blend well and repeat). Add the apples and stir to mix well into the batter. Scrape the batter into the prepared pan. Bake for 50-60 minutes or until the cake is golden brown and springs back when lightly touched near the center of the cake and the sides of the cake are beginning to pull away from the sides of the pan. Place the cake still in the pan on a wire rack. Pour the glaze over the cake while both the cake and the glaze are still hot.
GLAZE:
Combine all ingredients in a medium saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3 to 5 minutes, constantly stirring. Poke holes in the top of the cake and pour the glaze over the whole cake!
Roz also made double the suace and poured some on the plate first and she says that the sauce is great over ice cream–now that sounds mighty darn delicious!!
