- Slice the apples thinly, combine in pan with sugar, water, cinnamon, bring to the boil and simmer covered 10 min or possibly till apples are tender. Drain off liquid.
- Heat butter in pan, add in brown sugar, apple juice and cream and stir till combined. Bring to the boil and simmer, uncovered, about 5 min till syrupy. Stir in apples and rum and heat through.
- Lay crepes out on serving plate and fill with apple.
- Fold over crepe and spoon extra sauce over.
- Crepes and filling can be prepared ahead and reheated in the microwave.
- Pears can be substituted for apples.
