I found this recipe on Pinterest (in a nicely sized pin LOL).

As mon mari is always bringing windfall apples home it seemed like a good idea.

It was.

I made some changes to the recipe, of course.

The original recipe called for 2 cups of sugar.

That seemed like way too much sugar, especially when the only offsetting flavor was apples.

I looked at some of my other quick bread recipes, and even the cranberry bread (cranberries are very tart) only has 1 cup of sugar.

So, I cut it in half… And then I used half dark brown sugar and half white.

In retrospect, I might have cut it a little too drastically. Sugar helps make baked goods moist. If I were to make this again I think I would add another 1/4 cup of brown sugar.

Apple Bread

Total time: 75 minutes

Ingredients:

Instructions:

Preheat the oven to 350F (175C).

Butter an 8 X 5 loaf pan, then ‘flour’ it: put about 1 tbs flour in the pan and tilt the pan so that the flour covers all of the buttered area.

Put eggs, milk, oil, sugars and vanilla into a deep bowl and whisk well

Add apples and stir well.

Add all dry ingredients and stir well.

Pour the batter into the pan and bake for 60 minutes, until a toothpick inserted in the center comes out clean. Test after 55 minutes.

Remove from oven and allow to cool for 5 minutes.

Remove from pan and cool completely.

We finally had enough rain to be able dig the path.

That would be the ‘Royal We’ as mon mari did all the digging and hauling.

I encouraged him….

When it was time to lay the bricks I actually did some physical labor…. He hauled and smoothed the sand; I organized and laid the bricks.

And then he fixed the bricks….

Anyway, we’re done and we have a path.

Guapa likes it. She decided to pose on it for me.

Bonnie likes it, too but she was too tired to pose. She likes to snooze in the sun.

Neither dog liked walking over the rocks so they are happy to have a nice path.

On another note, we did the serious fall cleaning last week.

Mon mari washes the windows.

I asked him, as long as he had a bucket of cleaning water, to see if he could clean the wall above the fireplace. We deliberately put washable wallpaper on that wall.

As you can see the smoke does not wash off easily.

Actually, it doesn’t wash off at all.

So…..

The new project, which you can see he has already started, is to put wood paneling up.

I don’t think the original builders of this house and this fireplace cared about a bit of smoke staining the stone walls. Fireplaces in this region tend to be directly on the floor and very shallow. At some point this fireplace was given a raised hearth and an attempt was made to extend it forward – probably to help contain the smoke.

It didn’t work.

What one cannot fix one works around.

The other 3 fireplaces in the house (none of which are used) all have the original hearth on the floor.
