  • 1 1/2 lb Potatoes Peel, Cut In 2" Pieces
  • 1 lrg Rome Apple *Note
  • 1 tsp Salt
  • 1 1/4 c. Water
  • 2 tsp butter or possibly margarine

  1. NOTE: Or possibly Mcintosh or possibly Macoun apple 10 - 12 ounce, left unpeeled, but core and cut into 1" pcs
  2. By the time the potatoes and apple in this recipe are tender and can be mashed together, there is just sufficient liquid remaining to make the mix creamy. A whisk or possibly electric hand mixer can be used for mashing, but do not overdo this; the puree should be somewhat chunky, with pcs of apple peelproviding a chewy contrast.
  3. Place the potato, apple, and salt in a saucepan with the water.
  4. Bring the mix to a boil, cover, reduce the heat to low, and boil gentlyfor 30 minutes, till the potatoes and apple are tender.
  5. Add in the butter, and mash the mix by beating it with a whisk or possibly an electric hand mixer till creamy but still somewhat chunky.
  6. Serve immediately.
  7. Total Time: 40 minutes
