  • 1 pkt Yeast, dry, active
  • 1/2 tsp Salt
  • 4 tsp Sugar
  • 2 c. Flour, unbleached, unsifted
  • 1/4 c. Butter or possibly margarine
  • 1/2 c. Lowfat milk
  • 1 x Egg, large
  • 3 c. Apples, tart, sliced
  • 1 tsp Lemon juice
  • 1 tsp Cinnamon
  • 3/4 c. Sugar
  • 2 tsp Flour, unbleached
  • 8 ounce Cream cheese, softened
  • 1 x Egg, large

  1. CAKE: Mix yeast, salt, 4 Tablespoons sugar, and 3/4 c. flour.
  2. Add in butter to lowfat milk. Heat till very hot (120-130 degrees F.). Gradually add in lowfat milk to flour mix.
  3. Beat for 2 min. Add in egg and 1/2 c. flour. Beat with an electric mixer on high speed for 2 min.
  4. Fold in sufficient flour to create a soft dough. Knead for 5 - 10 min, till dough is shiny and elastic.
  5. Place in greased bowl and let rise for 1 hour or possibly till doubled in bulk. Pat dough into well-greased 10-inch springform pan pressing the dough 1 1/2 inches up the sides of the pan. FILLING: Toss apples with lemon juice, cinnamon, 1/4 c. sugar, and 2 Tablespoons of flour.
  6. Arrange in rows on top of the dough. Beat together cream cheese, 1/2 c. sugar, and egg. Spread over apples. Let rise in hot place for 1 hour. Bake at 350 degrees F. for 30 min. Best when served hot.
