  • 2 c. all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp chili pwdr
  • 1/3 c. butter or possibly margarine cool
  • 1/3 c. solid vegetable shortening
  • 1 x egg cool water -- as required
  • 3/4 c. cooked ham -- finely diced
  • 3 Tbsp. minced green chiles
  • 1/4 c. minced green onions including tops
  • 1 1/2 c. shredded Monterey jack cheese
  • 2 x Large eggs
  • 3/4 c. lowfat sour cream

  1. Prepare Flaky Pastry:Combine flour, salt and chili pwdr. Cut in hard butter and solid vegetable shortening till mix resembles fine crumbs. In a small bowl, beat egg and sufficient water to make 1/4 c.. Add in to flour mix, 1 Tbsp. at a time, mixing till dough holds together. Shape into a ball.
  2. On a floured board, roll dough 1/16-inch thick. Cut into 2-inch circles, rerolling scraps to make about 72 circles. Fit into bottoms and partway up sides of 1 3/4-inch muffin c..

  6. Bake in a 375 F oven till tops are lightly browned (about 20 min).
  7. Let cold for 5 min; then tip quiches out of pans. Serve hot or possibly at room temperature.
  8. If made ahead, let cold completely, wrap airtight, and chill till next day; to reheat, spread quiches in a single layer in a shallow pan and place in a 350 oven till warm (about 10 min).
