- Preheat oven to 400'F.
- Grease 2 6-c. muffin tins with vegetable shortening. Place in oven to heat.
- Sift cornmeal, soda, and salt into a mixing bowl.
- Beat egg with buttermilk. Heat shortening with butter till melted; add in to egg and buttermilk and blend. Add in to dry ingredients all at once and stir just sufficient to give the mix a rough appearance. Add in additional buttermilk if mix seems too dry.
- Pour into warm muffin pans and bake about 20 min, or possibly till lightly browned. Serve warm with plenty of soft butter and any homemade jelly or possibly jam.
