Lately, I’ve had this obsession with kids’ snacks like Teddy Grahams and Goldfish. What’s odd is that these aren’t foods I ate all that much as a kid. If that were the case, my cravings would actually make sense. But in truth, I use to turn my nose up at Teddy Grahams and only ate Goldfish on occasions. Perhaps my inner child is getting her fix of the treats she missed out on back in the olden days?
Whatever the reason, I crave those kiddie snacks lately. One of my favorites right now are the pink and white frosted animal cookies. Those things are like frosting-coated crack in a bag; if I start eating them, I cannot stop. For that very reason, I try to keep them out of the house. But dear Mother Cookie bought some for me the last time she visited, and my self-restraint crumbled like a bad pie crust.
I figured I might as well make the best of the situation. I mean, when life gives you animal cookies, make them into a dessert, right? So I took my favorite pink & white cookies and incorporated them into the tastiest batch of Rice Krispie Treats ever. Forget that recipe on the box; I’ve got the perfect RKTs right here.
My friend declared these Animal Cookie Rice Krispie Treats the best RKTs she’s ever had. I certainly can’t argue with her. The white chocolate chips are a perfect addition; they really add that extra ounce of sweet indulgent and upgrade these treats to a whole new level. Plus, I crafted my recipe to make these extra chewy. Did you ever notice how most homemade RKTs are just too crunchy? It’s because they don’t have enough marshmallows. Mine have extra, giving their texture the perfect balance of chewiness, gooiness, and sturdiness. I dare you to find better.

A Few Tips Before You Get Cooking:
You have to stir the marshmallow constantly while cooking, or it will burn.
These guys are party-ready. Double the recipe if you’re serving a big crowd.
Treats are easier to cut when cold, so pop ‘em in the fridge or freezer for a while before slicing.
As I state in the video, large marshmallows work better than mini. They produce a chewier texture. Don’t ask me why; that’s just how it is.
If you really want to make these fun, add some pink food dye.
Animal Cookie Rice Krispie Treats

Ingredients:
- 4 tbsp. (1/2 stick) butter
- 1 10-oz. bag large marshmallows + 1 1/2 cups more
- 6 cups Rice Krispies cereal
- 1 13-oz. bag frosted animal cookies, chopped
- ¾ cup white chocolate chips
- Rainbow sprinkles
Directions:
Spray a 9×13 pan with nonstick cooking spray. Set aside.
Melt the butter in a large pot over medium heat. Add the marshmallows and stir constantly until melted and smooth. Turn off heat.
Fold in the Rice Krispies until evenly coated. Add the cookies and chocolate and fold in just until evenly distributed; don’t overmix them, or you’ll melt the chocolate and the cookies’ frosting.
Pour mixture into prepared pan. Use wax paper or parchment paper sprayed with nonstick spray to press the treats down into an even layer. Let set completely, at least 20 minutes. Once at room temperature, you can place them in the fridge to make them sturdier for cutting.
Cut into squares and enjoy. Store in an air-tight container.
