  • 3 Tbsp. Bacon drippings
  • 1 c. Minced onion
  • 1/2 c. Minced bell pepper
  • 1 c. Finely minced parsley
  • 1 c. Dry white wine
  • 1 Tbsp. Finely minced garlic
  • 1 Tbsp. Soy sauce
  • 2 lb Audouille - or possibly other heavily smoked sausage Louisiana warm sauce or possibly grnd cayenne pepper to taste
  • 1 tsp Salt (or possibly to taste)
  • 6 med Potatoes, thinly sliced

  1. Heat the bacon drippings in a large, heavy saucepan over medium high heat, and saute/fry the onions, bell pepper, and parsley, stirring occasionally till the onions are clear. Add in the wine, garlic, soy sauce, and andouille, and mix well. Add in the salt and warm sauce and stir. Add in the potatoes, stir, cover, reduce the heat to low, and simmer, stirring occasionally till the potatoes are tender, about 30 min.
