And the Feast Concludes...with Cake!
Cake.
Good enough for Marie Antoinette.
Good enough for Brandon and Kaela as the concluding part of their Egyptian feast.
Basboosa (Semolina Cake with Honey and Lemon)
To make the syrup:
- 2 cups sugar
- 2 cups water
- 1 whole lemon
- 3 tsp honey
- For the cake:
- 3 cups semolina
- 1 cup flour
- 1 1/2 tsp baking powder
- 1 cup sugar
- 1 cup oil
- 1 cup milk
To make the syrup, peel the lemon with a potato peeler so you get some nice strips of zest. Juice the lemon.
Bring the sugar, water, and lemon juice to a boil. When boiling, add the strips of lemon rind.
Continue to boil until the mixture has a syrup consistency.
Add the honey and put to one side while you make the cake.
In a large bowl, mix the semolina, flour, sugar, and baking powder.
Add the oil and mix until well blended.
Grease a large 10x16 inch baking tray.
Add the milk to the mix and dot the dough onto the greased tray in large spoonfuls.
Shake the tray so that the mix is fairly level.
Bake at 350F for about 30 minutes.
Remove the tray from the oven, cut the cake into squares, and return to the oven for 5-10 minutes.
Pour the syrup over the cake as soon as your remove it from the oven.
So there you have it. A full meal designed and prepared by our two intrepid chefs. With a little help chopping and using the oven, kids of any age can get involved in the kitchen.
