Schnitz und Knepp is an old rare Amish dish. My neighbor growing up was from Pa Dutch country, he grew up on a farm. His mother made very traditional Pa Dutch recipes. This was something he ate as a child. Made with ham they smoked and apples they dried themselves, it's salty and sweet.

- Place ham, apples, water brown sugar, and spices in 6 qt dutch oven or heavy pot. Cover and bring to a boil. Simmer over med heat for about an 1 1/2 hrs till ham is tender. If using precooked ham it will only take 30-45 mins.
- Remove ham from broth and let cool to debone and remove fat.
- Cut ham into bite sized pieces.
- Prepare knepp dough (instructions below)
- Return meat to broth and bring to boil over med heat, add dumplings by tablespoons, make sure there is enough liquid to boil dumplings, add water if necessary. Cover with lid and simmer over low heat for 12 mins. DO NOT lift lid while dumplings are cooking.
- Directions for Knepp:
- Sift flour, baking powder and salt together in large mixing bowl. Cut in butter with pastry cutter or your fingers. Add milk and stir until dough is smooth. Drop by tbsps into boiling liquid, cover with lid and simmer for 12mins. do not lift the lid. approx 10 dumplings
