Amish Friendship Bread Starter

This is going to be a really fun week at anniebakes! About 8 months ago I helped to edit a book by author Darien Gee and this week it is FINALLY being published! The book is titled Friendship Bread, thus the recipe in this post. Later this week I will be reviewing the book, but today I wanted to get you started on the “starter” so that come next week, you have enough to start making the wonderful recipes I will be posting!

Amish Friendship Bread was actually started by a group of Girl Scouts in New York around 30 years ago. It is much like a chain letter, however there is no ill affects if you were to break the chain. The starter takes 10 days before you are able to bake with it. It is much like a sourdough bread in that it sits on your counter fermenting and getting better with age. All you have to do is mash it every day, add ingredients on day 6 and cook with it on day 10. When you also divide the batter and pass it on to 3 more people. Amish Friendship Bread Starter

INGREDIENTS:

1 (.25 ounce) package active dry yeast

1/4 cup warm water (100 degrees F/45 degrees C)

1 cup flour

1 cup sugar

1 cup milk

DIRECTIONS:

In a small bowl, dissolve the yeast in water. Let stand 10 minutes. In a 2 quart zip-loc bag, combine the flour, sugar, milk and yeast mixture. Let stand at room temperature and lock the bag tightly. Let air out if necessary. Consider this day 1 of the 10 day cycle.

RULES:

DO NOT use metal spoon or bowl for mixing

DO NOT refrigerate

If air gets in the bag, let it out

It is normal for the batter to thicken, bubble and ferment

Day 2: Squeeze the bag

Day 3: Squeeze the bag

Day 4: Squeeze the bag

Day 5: Squeeze the bag

Day 6: Add 1 cup flour, 1 cup sugar and 1 cup milk. Put in a larger zip-loc and squeeze until mixed

Day 7: Squeeze the bag

Day 8: Squeeze the bag

Day 9: Squeeze the bag

Day 10: Add 1 cup flour, 1 cup sugar and 1 cup milk to the batter in a large bowl. Mix with a wooden spoon or spatula. Pour four 1 cup starters into zip-loc bags. Keep one starter for yourself and give the other three to your friends along with these instructions. To the remaining batter add:

DIRECTIONS:

Preheat oven to 325 degrees. Pour batter into two large, greased and sugared (with cinnamon and sugar mixed) loaf pans. You can sprinkle some extra cinnamon and sugar top. Bake for 45-55 minutes or until toothpick comes out clean. I added pecans to the top of one loaf–mmm, yummy!
