Amish Friendship Bread Lemon Poppy Seed Biscotti
- Amish Friendship Bread Lemon Poppy Seed Biscotti
- 1 cup Amish Friendship Starter
- 2/3 cup sugar
- 1/2 cup butter, softened
- 1 t lemon extract
- 1 egg
- 3 cups flour
- 1 t baking powder
- 1/2 t salt
- 2 packets true lemon crystallized lemon or 2 T dried Dried Lemon Zest
- 3-4 T poppy seeds
- white chocolate melted, for dipping
- Preheat oven to 350
- In a medium bowl, cream together starter, sugar and butter. Stir in lemon extract and egg
In another bowl combine flour, baking powder, salt and crystallized or dried lemon. Stir into creamed mixture. Fold in poppy seeds.
Divide dough into 2 pieces. Roll each piece into a log about 10 inches long. Place logs on an ungreased cookie sheet and flatten until they are about 3 inches wide.
Bake for 30-35 minutes, until firm. Cool on baking sheet for 10-15 minutes
Slice logs crosswise into 1/2 inch wide slices. Place slices cut side down on baking sheet.
Return to oven for an additional 15 minutes, until crisp and light brown. Cool.
Dip one end of biscotti into melted white chocolate. Place on cooling rack, dipped side up, until chocolate hardens.
Store in an airtight container.
Yield: 24 biscotti
