- Heat peanut oil over medium heat. Add dals and fry until light golden, about 1-2 minutes. Remove and drin on paper towels to cool saving the oil in the pan.
- Reheat oil in pan adding the asafoetida, letting it fry for a few seconds until it swells up.
- Remove, drain and cool on paper towels then break up in to small pieces.
- Set side tumeric and garlic grinding the remaining spices to a fine powder.
- Transfer to a bowl, add in garlic and tumeric then mix well.
- Sieve and store in a sterlie airtight container.
