- Peel fruit, cut peels into very thin strips. Add in to saucepan with q qt of cool water, bring to a boil, bil for 10 min. Drain. cut fruit pulp into small pcs, discarding membranes and pith. reserve seeds, tie in cheesecloth. Add in liquid removed peel and measure pressing, add in 2 c. water for each c. of fruit.. Boil rapidly about 40 min in broad 5 qt pan. Measure again. Add in 1 c. sugar for each c. of fruit liquid, andd seed bag. boil rapidly for 50 min, stirring frequently, thill thick and amber.
- Remove seed bag, to test, drop small aount on cold saucer, it well hold with ut running when ready: Cold afew min, pour into warm sterilized jars, Seal with paraffin wax.
