Almondigas Recipe is believe to be originated from the traditional Mexican meatball soup called Albondigas soup. Albondigas means “meatballs” in Spanish. This Filipino version Almondigas has 3 main ingredients: meatballs, misua and patola, this is also known as loofah or Chinese Okra.

Meat Balls:

Almondigas Cooking Instructions:

For the Meatballs:

In large bowl combine ingredients for meatballs.

Mix thoroughly until all the ingredients are well incorporated.

Form every 2 teaspoons of mixture into balls. Set aside.

For the Soup:

Sauté garlic, onion and chicken cube.

Add Tomato Sauce and water.

Allow to Boil, then add meatballs, carrots, salt and pepper to taste.

Cover and Simmer for another 20 minutes, or until meat is cooked.

Add the patola (loofa) and cook for 3 minutes.

Add misua, then Simmer for 3 minutes.

Top with green onions.
