- In a small saucepan, combine the gelatin and cool water. Add in the boiling water and stir till the gelatin is completely dissolved. Place over medium heat and bring to a boil, stirring constantly. Gradually whisk in the dry lowfat milk and sugar and return to a boil. Stir in the almond extract and cinnamon. When the cinnamon is dissolved, pour the mix into an 8 inch square pan. Cover and chill till hard, about 1 hour.
- In a large bowl, combine the pear, grapes, kiwifruits, orange, pineapple and orange juice. Gently toss to mix well.
- To serve, cut the gelatin into 1 inch squares, add in to the fruit and toss gently. Divide among 4 individual bowls.
- NOTES : Kiwifruits, oranges and pineapples are all excellent sources of vitamin C.
