Almond Cake – a super moist and delicious almond flavored cake, topped with sliced almonds and powdered sugar.  A decadent cake that will please everyone! Let’s start Monday out with cake. And not just any cake.  The most moist cake I think I have ever made. My husband is not a chocolate fan, so I am always looking for desserts that we can both enjoy. This almond cake was no exception. If you like almond flavored anything, you are going to love this cake. A friend brought this cake to cooking club a few months ago, and I immediately knew I had to make it at home for my family. They were all happy I did too! I was surprised when I saw the recipe and it called for almond paste.  I have never actually cooked with almond paste before; I just assumed there was almond extract in the recipe.  Nope, paste. So I set out and found 2 cans of it (near the pie filling in the baking isle), and went to work. I will caution you to follow the directions exactly. If you do not mix long enough or high enough, your cake will not turn out. I have heard that from a couple people who have made it, so trust in the directions, even if they seem like over kill. You want to get the final results, trust me! Almond cake is a dense cake, it isn’t your normal light and fluffy cake.  My husband was a little skeptical when he saw there was no frosting involved.  I offered to make an almond glaze to drizzle over the top, but I thought frosting would be way too much. After he tried it, he definitely agreed.  No glaze was made. So even if you are a frosting lover, and think cake isn’t cake without it – try this! You can always add it later, but I know you won’t need to.  Sweet, moist, and tons of almond flavor. So make this almond cake and get your week off to the right start! Using an electric mixer, cream together the almond paste, butter and sugar on medium-high speed for 2 minutes. Reduce speed to medium-low, and slowly add the triple sec and eggs. Do not overmix. Sift together the flour and baking powder: add to butter mixture and mix only until blended. Pour batter into a greased and floured 9-inch springform pan. Bake for 45 minutes. Cover the cake with foil to prevent over-browning and continue baking for another 30-35 minutes. Remove from oven and allow cake to cool in pan, and then transfer onto a platter.
