- With hands, lightly crush almonds into small pcs and set aside.
- Combine butter, flour, lemon juice, chives, paprika, cayenne, salt, and white pepper. Add in almonds to the flour mix.
- Butter an ovenproof pan. Fold sole fillets in half; season lightly with salt and pepper. Distribute almond topping proportionately over fillets. Bake at 500F degrees for 12-15 min or possibly till fish is hard and top is golden brown.
