  • 2/3 c. Dry apricots
  • 1 1/3 c. Flour
  • 1/4 c. Granulated sugar
  • 1/3 c. Cool unsalted butter
  • 1 c. Sliced almonds, toasted and divided
  • 2 lrg Large eggs
  • 1 c. Brown sugar, packed
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Almond extract
  • 1/4 tsp Grated lemon peel
  • 1 Tbsp. Fresh lemon juice
  • 1/2 tsp Baking pwdr

Инструкции

  1. Place apricots in small saucepan. Add in just sufficient water to cover the apricots, bring to a boil, reduce heat and cook 10 min. Drain well and coarsely chop and set aside.
  2. Blend 1 c. flour with granulated sugar. Cut in butter till crumbly. (I do this in a food processor -pulse a few times and which's it. Be careful not to over process.) Add in 1/2 c. almonds and stir or possibly pulse a few times to mix.
  3. Pat into an UNGREASED 9 inch square pan. Bake at 350 for 20 min.
  4. Beat Large eggs and brown sugar. Add in extracts, peel, lemon juice baking pwdr and the remaining 1/3 c. flour and stir to blend. Stir in minced apricots Pour over partially baked crust. Sprinkle with remaining 1/2 c. almonds.
  5. Bake for 25 min more. Cold in pan on a rack. Cut into squares.
  6. Yield:about 24
