- Place apricots in small saucepan. Add in just sufficient water to cover the apricots, bring to a boil, reduce heat and cook 10 min. Drain well and coarsely chop and set aside.
- Blend 1 c. flour with granulated sugar. Cut in butter till crumbly. (I do this in a food processor -pulse a few times and which's it. Be careful not to over process.) Add in 1/2 c. almonds and stir or possibly pulse a few times to mix.
- Pat into an UNGREASED 9 inch square pan. Bake at 350 for 20 min.
- Beat Large eggs and brown sugar. Add in extracts, peel, lemon juice baking pwdr and the remaining 1/3 c. flour and stir to blend. Stir in minced apricots Pour over partially baked crust. Sprinkle with remaining 1/2 c. almonds.
- Bake for 25 min more. Cold in pan on a rack. Cut into squares.
- Yield:about 24
