  • 1/2 c. vegetable oil
  • 1 quart cut up alligator meat
  • 1/2 c. minced onion
  • 1/2 c. minced bell pepper
  • 1/2 c. minced celery
  • 2 Tbsp. chopped parsley
  • 1 x 10-oz can tomatoes with green chilies salt and pepper
  • 1 c. cooked rice

  1. Put vegetable oil and alligator meat in heavy 4 qt cooking pot. Add in minced vegetables, parsley and tomatoes. Season with salt and pepper. Cover pot and cook over medium heat for one hour. Serve over warm cooked rice.
