2 lb Alligator meat, cut in thin strips approx. 1"long x 1/4"thick 3/4 lb Butter (3 sticks) 1/2 c. Green onions, minced 1/4 c. Parsley, minced 3 clv garlic, chopped 4 stalk Celery, minced 1/2 c. Red bell pepper, seeded and minced

1/2 c. Green bell pepper, seeded and minced 2 lrg cans stewed tomatoes 2 lb okra, stem and cook separately till tender 1 tsp grnd cayenne pepper 1 tsp grnd black pepper 1/2 tsp salt (to taste)

1. Saute/fry onions, garlic, peppers and celery in butter till soft. Add in other ingredients, except okra, and simmer for 10 min in large covered iron pot. Add in okra to other ingredients + some of okra cooking liquid and cook another 10 min. Add in alligator meat and allow to cook over low heat till tender (approximately 1 hour). If gravy is too thick, add in a little warm water. Serve over rice with warm buttered cornbread on the side.
