,%20sourdough,%20milk%20loaves,%20baguettes,%20all%20of%20them.%20All%20have%20their%20place.%20All%20are%20good,%20but%20still%20the%20simple%20recipe%20remains%20a%20backstop%20in%20my%20kitchen.%3C/p%3E%3Cp%3EA%20kilo%20of%20flour%20and%20600ml%20of%20water.%3C/p%3E%3Cp%3ESome%20things%20are%20best%20left%20as%20they%20are.%20Some%20things%20don%E2%80%99t%20need%20to%20be%20messed%20with,%20don%E2%80%99t%20need%20to%20be%20improved,%20and%20this%20is%20one%20of%20those%20things.%20It%20isn%E2%80%99t%20fancy,%20it%20isn%E2%80%99t%20artisanal,%20but%20it%20is%20good%20and%20honest.%3C/p%3E%3Cp%3EI%E2%80%99ve%20done%20one%20thing,%20made%20one%20tiny%20change%20to%20this%20decades%20old%20routine,%20and%20it%E2%80%99s%20worked.%20It%E2%80%99s%20made%20things%20better.%3C/p%3E%3Cp%3EI%20habitually%20make%20bread%20on%20a%20Sunday%20afternoon,%20late%20afternoon,%20maybe%20at%20about%20four%20or%20five%20PM.%20The%20challenge%20is%20to%20get%20everything%20out%20of%20the%20oven%20by%20half%20ten%20at%20the%20latest,%20allowing%20enough%20time%20for%20a%20good,%20long,%20slow%20rise%20so%20that%20the%20flavour%20of%20the%20dough%20has%20time%20to%20develop%20as%20the%20yeast%20works%20its%20magic.%20It%20can%20be%20a%20push,%20and%20there%20are%20times%20when%20I%20wait%20and%20wait%20for%20a%20batch%20of%20loaves%20to%20cook,%20desperate%20to%20get%20to%20bed%20ready%20for%20Monday.%3C/p%3E%3Cp%3EBut%20there%E2%80%99s%20another%20way%20to%20get%20that%20long,%20slow%20fermentation.%20It%20gives%20better%20results%20with%20less%20of%20the%20hassle.%3C/p%3E%3Cp%3EUsing%20a%20pre-ferment,%20or%20a%20sponge,%20solves%20these%20problems.%3C/p%3E%3Cp%3EIt%E2%80%99s%20very%20simple.%3C/p%3E%3Cp%3EThe%20night%20before,%20or%20even%20early%20on%20the%20same%20morning%20I%20want%20to%20bake,%20I%20mix%20together%20half%20of%20the%20flour%20with%20all%20the%20water%20and%20all%20the%20yeast%20to%20make%20a%20very%20wet%20and%20loose%20slurry.%20The%20loose%20dough%20sits%20and%20gently%20bubbles%20away%20for%20many%20hours,%20slowly%20fermenting%20and%20developing%20flavour.%20When%20it%20comes%20time%20to%20bake,%20I%20add%20the%20other%20half%20of%20the%20flour,%20the%20salt,%20and%20any%20other%20ingredients%20that%20are%20going%20into%20that%20particular%20batch%20before%20mixing%20it%20together%20into%20a%20pliable%20dough%20and%20kneading%20it%20out.%3C/p%3E%3Cp%3EThis%20shortens%20the%20active%20baking%20time%20considerably,%20because%20the%20new%20dough%20made%20with%20the%20old%20pre-ferment%20only%20needs%20one%20bulk%20rise%20instead%20of%20two,%20so%20the%20process%20can%20be%20up%20to%20a%20couple%20of%20hours%20shorter.%20The%20first%20stage,%20overnight,%20counts%20as%20one%20bulk%20rise,%20and%20it%E2%80%99s%20then%20that%20the%20dough%20develops%20its%20flavour.%3C/p%3E%3Cp%3EThis%20method%20isn%E2%80%99t%20sourdough,%20although%20it%20shares%20some%20of%20the%20characteristics,%20and%20a%20slug%20of%20sourdough%20starter%20in%20the%20initial%20sponge%20along%20with%20the%20yeast%20works%20wonders.%20A%20sourdough%20is%20raised%20with%20only%20wild%20yeast,%20but%20it%20shares%20the%20same%20low,%20slow%20fermentation%20period%20to%20wake%20the%20yeast%20and%20bulk%20up%20the%20dough.%3C/p%3E%3Cp%3EThe%20end%20result%20of%20a%20dough%20leavened%20with%20a%20pre-ferment%20is%20excellent.%20The%20dough%20is%20easier%20to%20handle,%20more%20supple,%20and%20has%20an%20improved%20spring%20in%20the%20oven,%20exploding%20out%20of%20the%20tin%20or%20off%20of%20the%20baking%20sheet.%20The%20finished%20bread%20has%20an%20even%20crumb%20and%20a%20complex%20and%20deep%20taste,%20with%20a%20mild%20tang%20of%20sourness%20to%20it.%3C/p%3E%3Cp%3EIt%E2%80%99s%20well%20worth%20the%20effort,%20but%20it%20needs%20organisation.%20It%E2%80%99s%20also%20best%20to%20make%20this%20type%20of%20loaf%20in%20bulk.%20I%20bake%20this%20in%20batches%20using%204kg%20of%20flour,%20and%20multiply%20everything%20up%20accordingly.%20Kneading%20is%20an%20effort,%20of%20course,%20but%20it%E2%80%99s%20worth%20it.%20Another%20trick%20%E2%80%93%20use%20a%20homebrewers%E2%80%99%20fermentation%20bin%20to%20mix,%20rest%20and%20rise%20the%20dough.%20They%E2%80%99re%20cheap,%20enormous,%20come%20with%20a%20good%20lid%20and%20you%20can%20see%20through%20the%20sides,%20so%20it%E2%80%99s%20easy%20to%20keep%20track%20of%20how%20well%20your%20dough%20is%20rising.%3C/p%3E%3Cp%3ESometimes,%20little%20changes%20make%20a%20whole%20world%20of%20difference.%3C/p%3E){kind=link}
