Its white and white everywhere. Oh! Yeah! The winter is upon us and my heart races and fills with joy just like a kid on seeing the white widespread blanket. Oh! we don't have to be a kid to play in the snow. Do we? So we were hailing snow balls at each other and had loads and loads of fun two days back. After spending about an hour in the cold outside, all we could feel like doing is cuddle inside a blanket and stay indoors with something warm and soothing to eat. And what can be more warm and hearty and satisfying than a bowl of goodness in the winter days ? It can be your best bud on the chilly nights and your personal caretaker when you diet and a physician when you are sick. There is every excuse to have a bowl in fact a large bowl. :) :) :) It can be an appetizer as well as a whole meal in itself and a guaranteed crowd-pleaser. What more to say ? Let's all enjoy this winter with a hot bowl.
This is a simple satisfying bowl full of veggies and seasoned with the basic ingredients from the pantry - Salt & Pepper. It has all the nutrition goodness from all the veggies, in a single bowl just under 15 minutes. The heat from the pepper acts as a decongestant for cold. All Clear Soup
Under 15 min
Ingredients
- 1/2 Tbsp Butter
- 1 Medium sized Onions, sliced
- 2 Cups Carrot, cabbage and peas
- 3 Cups Water / Broth
- 1 Tbsp Freshly ground Cumin-pepper powder
- Juice of half Lime, optional
Instructions
Julienne the carrots and cabbages. Heat butter in a pan and add the Onions and sauté them until they turn golden brown.
Then add the vegetables and sauté them for a minute. (1)
Then add the water / Broth and allow it to boil. Once the veggies are cooked, add salt and pepper turn off the flame.(2)
Garnish with parsley and lime juice if you use and serve warm.
Note
If you use frozen peas, add them in the end. 2 or 3 minutes before you turn off the flame. If you use dry peas, soak them overnight and pressure cook them separately and then add it in then end. When you cook the peas, add salt so that they will be well seasoned.
You can either use Broth or water or both. I used 1 cup of broth and 2 cups of water.
Chinese cabbage is preferred but if you don't have it, any cabbage will do.
