Aligue is such a sinful ingredient, it’s delicious but it has its downsides, and like any delicious food items this is not for the health conscious as it is fatty and will give you health issues specially if you have high cholesterol. So what is Aligue? Basically, it is pure crab fat, it may not be for everyone but it definitely is delicious. It is quite fairly new to the Philippine cuisine but Filipinos love them ever since even before it was commercialized, you just have to get it on boiled crabs and eat it with rice before. Now it is easily available in jars, though it’s not as pure as what you get from fresh crabs but it’s the next best thing for the sake of convenience. With the advent of the commercialization of this ingredient new dishes were created using this like the aligue pasta, hipon sa aligue and this fried rice we are posting today. With a rich creamy with hints of seafood flavour this can go a long way in creating new dishes, how about you how will you use it? Aligue Rice   Save Print Prep time Cook time Total time   Serves: 3-4 Ingredients 4 cups cold jasmine rice 3 heaping tbsp aligue 2 tbsp butter 4 cloves garlic, minced 2 stalks spring onions, sliced freshly ground black pepper salt Instructions Heat up a wok, melt butter then sauté until golden brown in colour and fragrant. Add the crab fat and cook for a minute. Add the rice and using your ladle separate the grains and mix well making sure the crab fat is evenly distributed.
